Punch and Munch

I know from the many classes and groups I talk to that women love to share a 'cuppa' and a sweet treat as they work on their punchneedle embroidery.

A favourite recipe of mine
Here is a recipe which was shared with me and which I serve at many of my classes.
Apple and sour cream slice
1 tin of pie apple
1 packet of butter cake mix
1cup coconut
1egg
4oz (125 gms) butter
200 ml of sour cream
Melt the butter and add to the combined cake mix and coconut.
Put this into a tin approx. 8" x 11" (20 x 28 cms)
Spread the pie apple over the top
Mix the sour cream and egg and pour over the apple
Sprinkle with cinnamon and a little bit of sugar
Bake for about 30 minutes at 180 degrees.
Cut into slices Enjoy!

A new cake recipe
Supposedly this is a healthy fruit cake. Thank you to our friend in Tasmania for sharing this recipe.
Soak 1 kg of mixed dried fruit in 2 cups of coffee. Leave for 6 hours.
Add 2 cups of self raising flour and a 200gm block of fruit and nut chocolate.
Peter likes to add some finely chopped glace ginger - definately optional.
Mix all together, place in a 9" square cake tin and then bake. Initially set the oven at 220 degrees for the first 10 minutes and then lower to 350 degrees for the remaining hour or so that the cake will take to cook.
Cool in the tin. Turn out onto a rack. Cut into small slices and share.
